TrophyEaten regularly, it will give you tons of fiber, prevent and or control diabetes. It is also suited for the busy lifestyle some of my readers may endure. No need to run and grab something on the road. Make this healthy, filling and delicious breakfast at home and save money that would otherwise be spent on fast food and medical expenses. Like I stated earlier, another WIN, WIN situation for the entire family.

All it takes is some time, just a little time and planning to ensure that your family is eating meals prepared at home to ensure that diabetes is kicked out of your home and will never return. Diabetes is an unwelcomed guest in your home and it is a good idea to make that abundantly clear.

Nuts, Seeds, Berries and Oatmeal Sizzle

Preparation the night before:

  1. Soak the oats in water and leave in the refrigerator
  2. Use a food processor to chop the nuts
  3. Slice the berries and place in the refrigerator

For four (4) adults, you will need:

  1. Two cups steel-cut oats soaked overnight in 2 cups of water
  2. Two cups water
  3. One cup whole milk
  4. Honey to sweeten (I use one diced ripe banana for my sweetener)
  5. Four tablespoons ground flaxseed
  6. Four tablespoons finely chopped nuts (almonds, pecans or walnuts)
  7. One cup berries (strawberries, blackberries and raspberries)
  8. A pinch of grated nutmeg
  9. A pinch of cinnamon
  10. A pinch of salt

Oats Porridge

Method:

  1. In a saucepan with a thick base, combine the oats and the water
  2. Add the salt and nutmeg
  3. Bring to a boil on low to medium flame, stirring constantly to prevent sticking
  4. Let it simmer for 4 to 5 minutes (remember to stir). The porridge will get thick in this timeframe
  5. Add the milk and ensure that the flame is on low. Stir until the milk is warm. I sometimes warm the milk and then add it to the oats porridge
  6. Divide into bowls
  7. Sweeten with a little honey or add ripe banana
  8. Add one tablespoon of the berry mixture
  9. Add one tablespoon of the nuts
  10. Sprinkle a little cinnamon and flaxseed

I guess my problem is more of obesity rather than diabetes. But looking at your recipe, I guess it’s healthy food all the way. I’m not really into oat, probably because I didn’t know how to make it tasty. I could give your recipe a try. And see if it will change my mind about oat and probably trim down the waistline a little.

Great recipe! I’m always on the look out for some low carb recipes. Do you know the nutrition info for this dish? I used flax in some recipes, and it gets a bit dry, but I love the low carb aspect of it. Thanks for the recipe!

I am glad you like the recipe, but unfortunately, I can’t speak to the nutrition information. I am diabetic and I love to educate myself on said topic, and I continue to experiment with putting foods together, I then take my readings and if the spike is nothing to write home about, then I am good. I also pay attention to the effect on my weight and blood pressure and after that, I am “good to go.” I wish for you all the best.
