This is Part 2 of a series in preparing delicious, low carb breakfast at home for the family. The focus is on easy to prepare breakfast that the entire family can enjoy. They are so simple and fun, the children can be involved. It is an affair for the entire family to spend some good quality time as a team, determined to live healthier and happier lives.
The end result should be to prevent the other family members from ever becoming diabetic and to control diabetes for the persons already suffering with the illness. These healthy recipes for diabetics is a WIN, WIN situation for the entire family.
WIN, WIN Situation for ALL
Today, I will share with you a simple breakfast using oats, nuts, seeds and berries. Yes, yummy! And healthy too. Eaten regularly, it will give you tons of fiber, prevent and or control diabetes. It is also suited for the busy lifestyle some of my readers may endure. No need to run and grab something on the road. Make this healthy, filling and delicious breakfast at home and save money that would otherwise be spent on fast food and medical expenses. Like I stated earlier, another WIN, WIN situation for the entire family.
All it takes is some time, just a little time and planning to ensure that your family is eating meals prepared at home to ensure that diabetes is kicked out of your home and will never return. Diabetes is an unwelcomed guest in your home and it is a good idea to make that abundantly clear.
Nuts, Seeds, Berries and Oatmeal Sizzle
Preparation the night before:
- Soak the oats in water and leave in the refrigerator
- Use a food processor to chop the nuts
- Slice the berries and place in the refrigerator
For four (4) adults, you will need:
- Two cups steel-cut oats soaked overnight in 2 cups of water
- Two cups water
- One cup whole milk
- Honey to sweeten (I use one diced ripe banana for my sweetener)
- Four tablespoons ground flaxseed
- Four tablespoons finely chopped nuts (almonds, pecans or walnuts)
- One cup berries (strawberries, blackberries and raspberries)
- A pinch of grated nutmeg
- A pinch of cinnamon
- A pinch of salt
- In a saucepan with a thick base, combine the oats and the water
- Add the salt and nutmeg
- Bring to a boil on low to medium flame, stirring constantly to prevent sticking
- Let it simmer for 4 to 5 minutes (remember to stir). The porridge will get thick in this timeframe
- Add the milk and ensure that the flame is on low. Stir until the milk is warm. I sometimes warm the milk and then add it to the oats porridge
- Divide into bowls
- Sweeten with a little honey or add ripe banana
- Add one tablespoon of the berry mixture
- Add one tablespoon of the nuts
- Sprinkle a little cinnamon and flaxseed
Yes, believe it or not, a delicious and easy to prepare breakfast was just served. Again, this is packed with vitamins and minerals and you are getting a little starch and protein to kick-start another wonderful day. How easy and nutritious is this home prepared meal to assist the person with diabetes to take control and to prevent this deadly illness from taking residence in your home?
